With it being so hot here in Northwest Georgia, we’re trying to do most of our cooking outside. One of our favourite quick, easy summer meals is Paninis. Here’s how we make ours without a fancy Panini Press.
First, to make the spread: Mix ½ c Miracle Whip with ¼ c Spicy Brown Mustard.
Lay out your thinly sliced bread (here we used tomato basil bread I picked up from Panera.)
Spread with Miracle Whip mixture.
Place one or two slices of honey maple ham (or your favourite meat) on half the bread slices. Add several slices of very thinly sliced green pepper.
Next layer on thin slices of baby swiss (or your favourite cheese.)
Brush top of sandwich with olive oil.
Flip sandwiches over and brush the other side with olive oil.
Place sandwiches on preheated cast iron grill. (<-affiliate link)
Place cookie sheet on top and weigh it down with a heavy cast iron fry pan. (<-affiliate links)
Grill for sixty seconds or till lightly browned.
Remove the fry pan and cookie sheet. And flip the sandwiches.
Replace cookie sheet and fry pan and grill for another 60 seconds or til done.
Enjoy perfectly grilled paninis!

The sandwiches look yummy – I’ve never been to Panera but if they have tomato basil bread I’ll be happy to go check them out, lol! I think there’s one in the next town – maybe we’ll do a “road trip” this weekend!
