While surfing blogs this morning I came across this yummy looking breakfast recipe and since I had two avocados that needed to be used up, plus half a package of bacon in the fridge that also needed to be used up… it was the perfect morning to try something new.
I didn’t have any green onions to sprinkle on top so mine doesn’t look as pretty as the ones her husband made.
This made a nice sized Sunday breakfast for two but would also be great recipe to serve to company Christmas morning. It’s quick to put together and once you pop it in the oven all that’s left to do is make the coffee and toast to go with it.
