Do you have boiled eggs in the fridge that need using up?

Perhaps from all those eggs that you colored for the Easter Bunny to hide.

Or maybe you boiled up a bunch on the weekend, intending to use them throughout the week but now need to get them used before they go bad (boiled eggs should only be stored in the fridge in a sealed container for a maximum of 7 days.)

Hard boiled eggs can be used in so many delicious ways.

The most obvious way is to peel and eat them plain or sprinkled with salt and pepper. They are an excellent, protein rich snack.

You could get creative and turn them into Egg Flowers.

Here I’ve added halved strawberries for a bright pop of red:

The next obvious way to eat them is in egg salad sandwiches.

Simple egg salad recipe: chopped eggs, green onion, celery and mayo. Salt and pepper to taste.

Take it up a notch by serving on toasted English muffins that have been quartered then top with chives and a quarter slice of cucumber.

For the ones pictured above I used gluten free English muffins.

Or if you like cucumbers as much as I do… make Cucumber Egg Salad Sandwiches. They have a wonderful crunch when you bite into them.

This is our tried and true family favorite potato salad.

Pickled Eggs

Pickled eggs are a simple and delicious way to preserve hard boiled eggs. And they will last stored in the fridge for three to four months.

Peel 6 eggs, layer them with sliced onion in a sterilized glass jar.

To make the brine:

Heat 1/2 c of water, 1/2 c of vinegar and 2 tablespoon of sugar in a small pot. Bring to a boil, stir until sugar is dissolved. Remove from heat and allow to cool. Once cooled, pour the brine over the eggs and onions, making sure the eggs are completely covered with the liquid. Add the lid and refrigerate for at least three days before eating to allow the pickled flavor to develop.

Have 12 eggs to use up? Use a quart jar and double the recipe for the brine.

A tasty variation is Pickled Beet Eggs. Simply substitute canned beet juice for the water in the recipe above.

The ones below were made from the beet juice I reserved when making my Beet and Edamame Salad.

Don’t be put off from giving these a try, thinking that those puff shells are too difficult to make. They are actually super simple and the batter comes together within minutes.

To make them gluten free, I replaced the all purpose wheat flour with 1 cup of Robin Hood Gluten Free All Purpose Flour.

I’ll let you in on a little secret I learned years ago for making perfectly puffed puffs:

Bake them at 450ºF for 15 minutes, then reduce the oven temperature to 325ºF for 25 to 30 minutes or until they are golden brown and dry. Most recipes tell you to bake them for 15 minutes at 400ºF, but I find that leaves you with a gooey, underbaked inside.

I also substituted 2 tbsp of freshly snipped chives and 1 tsp of fresh finely chopped dill for the parsley in the filling.

Please note: Egg Penguins would not be suitable to serve to small toddlers or young children who wouldn’t understand that they need to remove the toothpicks holding the penguin together before eating.

In the original Egg Mice post that I linked to above, she used raisins for the eyes and nose. I substituted dried currants.

I also added tails made from thinly sliced green beans. When I showed the pictures to my husband, Dave, he suggested that I could also have taken slices from the outside of a celery stick as those would have given them curly tails.

Monster Faces

You could also let the kids make their own monster faces!

This one is my own little creation:

Cut a hard boiled egg in half and carefully scoop out the yolk to use for eyeballs placed on top of cucumber slices .

For the eyelids: the egg white halves are sliced in half again and arranged over the top of the eyeballs.

Olive slices for the center of the eye, cashews for the ears and a carrot wedge for the mouth.

Cut up whatever veggies you have on hand and let your kids have fun making their own snacks.
